Good for you in every way, this delectable cake is our namesake cake. The wildflower, Queen Anne's Lace is a member of the carrot family, so naturally our signature cake is our version of everyone's favorite, Carrot Cake. In keeping with our love of nature, this cake is sweetened with wildflower honey and dark maple syrup, rather than white sugar. Using unsweetened applesauce and canola oil makes it very moist and reduces the amount of fresh eggs and butter. The use of whole wheat pastry flour increases its nutritional value, as do the plump golden raisins and sweet shredded carrots. The warm spices are as delicious to smell as well as savor.
